Cucumber, Avocado, Basil, Lime Smoothie

I woke up early yesterday morning, determined to prove (to myself, mostly) that the smoothie flowchart really does work.  I’m confident about the viability of the “Sweet” side of the chart, but to be honest, wasn’t completely certain about the “Savory” path. Until now.

As I lay in bed pondering smoothiedom, I developed a craving for a cucumber smoothie, which probably strikes you as odd — as it did me.  (Maybe I needed some Vitamin K, I don’t know.) So, I followed the flowchart, and, working with what I had available, came up with this. I think it’s a pretty big win.

Cucumber, Basil, Lime, and Avocado Smoothie

Ingredients
  • 1 large cucumber, peeled and seeded
  • ½ large avocado
  • 1 lime, peeled
  • ½ cup rolled oats
  • 1 cup milk
  • ½ cup crushed ice
  • 4-5 basil leaves
Instructions
  1. Peel the cucumber, slice into quarters lengthwise, and remove the seeds. Drop in the blender. Peel the lime and toss the whole fruit in. Scoop out half an avocado and add to the pitcher.
  2. (Avocado tip: If you keep the pit in the other half of the avocado and then put it in an airtight container in the fridge, it won't turn brown as quickly.)
  3. Blend to liquefy the first ingredients.
  4. Add the oats, milk, and crushed ice and blend at high speed again, until the oats "disappear" into the mixture.
  5. Add the basil and briefly puree one last time.
  6. Serve immediately, garnished with a basil leaf.

      (though if you’re going to do that, skip the crushed ice, and maybe cut the milk down to half a cup… just sayin’)

    oh my goodness. i just made this recipe for the first time and it was awesome. i didnt expect the amount of energy it gave me either and i didnt even drink the whole thing. (im saving the rest for breakfast so i hope it sits well overnight) now i can hit the gym like i wanted to tonight. thanks for the simple yet satisfying recipe!

    This is so good! I actually added about 2 tablespoons of sugar in the raw, which made it almost taste like a fruit smoothie, but way better. Thank you! :D

    Mixed verdict here – I really enjoyed it and found it refreshing. My wife and daughter did not agree – my wife declared it tasted like ‘mowed grass’ while my seven year old clapped her hands to her mouth and ran in circles shouting “It tastes like vomit”. I’ll leave you to make up your own minds – it’s a possibility that they’re just not ‘smoothie people’.

      For future smoothies, I’m guessing you’ll want to stick to the “sweet” side of the smoothie flowchart for them. :)
